THE EFFECTS OF DRYING PROCESS ON KAFFIR LIME LEAVES, this project studied on three objectives that included to study the effects of temperature and time of drying process on kaffir lime leaves, to qualify proper condition of drying process, and to study how the temperature of drying process and the different state of packaging affect the quality of leaves after storage. I gathered many published from the internet to be guideline, planed the steps of research, managed time and date to do laboratories for I could study and do the project at the same time. After collecting data, I analyzed them by SPSS program.

Cooperated with the production team and QC to produce MANGOSTEEN FRESH-CUT products. As a researcher, I studied and gathered from many website, books and published to make choices of proper food additive to keep the product fresh, firm and bright, then found the best one from the choices by testing on product sample under the accelerating factors, and observed their quality and shelf life then.
