- Implements food safety management system for hotel.
- Monthly Internal audits for kitchens, outlets, engineering and Housekeeping and preparations of reports.
- Conduct supplier audits to ensure raw material specifications are met at standard.
- Develop policy, procedure and all forms for GMP/HACCP.
- Conduct Basic food safety training, Food Allergen training and HACCP and document training.
- Chairs FSMS meetings and communicates the minutes with HACCP team and General Manager.
- Verify cleanliness by swab test method, water and ice check by coliform test and internal calibration of thermometer.
- Coordinate with laboratory for microbiological analysis.
- Investigate food borne illness complaint from guest.
- Verification the Record in GMP Checklist such as Instruments Calibration, Water Treatment Checking, pest control, chemical product use and etc. in order to Monitoring the Quality System.
- Create New LSOP due to COVID-19 Situation.
- Maintain GMP/HACCP in bakery kitchen.
- Create bakery Product specification.
- Assist hygiene manager implement GMP/HACCP system for hotel.
- Assist hygiene manager conduct monthly Internal audits for kitchens, outlets and food safety department concerns and preparations of reports.
- Conduct food safety training, HACCP training and food allergen training for food handler.
- Handle customer complaint.
- Handle food safety audit from customer such as starbuck, LSG sky chef and GMP/HACCP certified body 3-4 times a year.
